Monday, Monday!

What a Monday! Things can get crazy in the IT Admin world!

On the drive home from a long day at work all I could think of is, dinner. What will I make for dinner!! It must be something simple, because all I really feel like doing is taking a nap when I walk through the door. Tonight we had this!


Kale, salmon, avocado and egg. Yum and super easy! Recipe can be found in this months issue of Paleo Magazine.

Dinner is done, dog is walked and it is now time for some me time. Tonight it will have one of my favorite treats (Coconut Bliss) while enjoys some mindless Netflix.  HAPPY MONDAY!

Morning Rush

Some mornings I have a hard time getting it all done before I run out the door for work. Breakfast has always been very important to me and even more so now, with my new diet restrictions. Today I just had no time to eat let alone cook anything, so it was grab and go. Breakfast at the office!

Should I stay or should I go

It is always funny the way things work. My husband is a brilliant man, I am not sure where he stores all of the information he has in that brain of his. He has grown board with his current job where he has been for years. He has decided to move on and expand his knowledge. However, once you say you are leaving, everyone always wants to keep you.

Just something to think about!

About two months ago my mom was in town. We had just moved into our house.

My Mom says “let go to the animal shelter”. My husband was like ” don’t you dare come home with a dog”. I said  “I won’t” and I didn’t, not that day at least.

It was love at first sight when I saw this pup. How could anyone abandon this handsome guy. I sent this photo to my husband and he said “bring him home”.


It turned out that a family had already put a hold on this cute guy, they had till 5pm the next day to come and get him. I called around 4pm to see if he was still there and he was. Florin and I got in the car and drove over is was 4:58 when we got there. Jake (boomer at the time) was still there! Long story shot they never showed up. So, this Great Dane/Lab pup came home with us.

Jake is on a similar heath journey as the rest of they family. He is on a high protein gluten-free diet. If I could not eat it he should not have it. I am always on the look out for good quality treats for him. Pig ears from the farmers market is one of his favs. He is also a fan of some of my home made doggie treats. 🙂

Roasted tomato soup

Home made roasted tomato soup. I find that this time of year the garden is over flowing with tomatoes. Perfect time to make some tomato soup.

Home made roasted tomato soup. I find that this time of year the garden is over flowing with tomatoes. Perfect time to make some tomato soup.

This soup is very easy!

I took just under 4 pounds of tomatoes and roasted them in the oven with a few garlic cloves for just over an hour. I sautéed an onion with a pinch of salt. I pilled the cooled tomatoes and added it to the pan with the onions. I garbed some fresh basil from the garden and trough that in, about a table spoon chopped. I brought everything to a boil and added a half cup of vegetable stock.Then simmered it all for about 5 min. Dropped it all in the food processor for a nice creamy soup and YUM!
